Creamy Chicken and Cauliflower Rice

Creamy Chicken and Cauliflower Rice Bowl

Serves: 2

Prep Time: 10 minutes | Cook Time: 15 minutes


Ingredients:

1 tbsp olive oil

2 boneless, skinless chicken breasts (about 10–12 oz total), diced

2 cups cauliflower rice

1 cup steamed green beans

1/4 tsp onion powder

1/4 tsp garlic powder

Salt and pepper to taste

1–2 tbsp unsweetened cashew milk (or use thick coconut cream for richness)

Optional: 1 tbsp grated parmesan cheese


Instructions:

• Heat olive oil in a large skillet over medium heat.

• Add the diced chicken and season with onion powder, garlic powder, salt, and pepper.

• Cook until golden and cooked through (about 8–10 minutes).

• Add cauliflower rice and green beans. Cook another 4–5 minutes until everything is hot and tender.

• Stir in cashew milk or coconut cream for creaminess. Adjust seasoning as needed.

• Top with parmesan (if desired) and serve warm.


This version has around 30–35g protein per serving, depending on the exact size of the chicken breasts — perfect for staying fueled and satisfied!
